Massimo Bottura, founder chef of the three-Michelin-star restaurant Osteria Francescana in Modena, is the star of the film “Innovation” in the project Panerai Traits, the series created by Officine Panerai in collaboration with four international personalities who are the perfect embodiment of the distinctive traits of the brand.
The Italian chef’s Modenese restaurant, which was awarded the title of best restaurant in the world in 2016 by The World’s 50 Best Restaurants, is a cult destination for numerous gourmets who come from all over the world to enjoy the remarkable tradition of Italian cuisine revisited by Chef Bottura in an innovative manner, following his motto “tradition in evolution”. “Look at the past in a critical way, not nostalgically. To innovate, it is necessary to take the best of the past and carry it forward into the future”, says Bottura in the film shot in various locations in Modena, including the Piazza Grande, the historic Albinelli market and his restaurant. Massimo Bottura’s cuisine applies Italian culinary traditions to materials of the highest quality from Italy’s “food valley”, the central region in which Modena is located.
